I’m not cooking. It’s too hot and I’m too tired. However, I will use the air fryer until it begs for mercy or catches on fire. Whichever comes first. Here’s a recipe for something I just came up with where you’d think I’d be stoned, but I don’t do that anymore and so now what? I was watching tiktok and saw someone make a katsu sandwich, where they actually pounded the pork cutlet thin, breaded and fried it? But, they made this quick Katsu sauce and I was like…why not make the whole thing quicker by using a frozen chicken patty that’s already breaded?
FROZEN CHICKEN CUTLET KATSU SANDWICH
Yields One Sandwich
2 frozen chicken patties/cutlets, like AppleGate
Handful of iceberg lettuce, thinly shredded*
Wedge of Fresh Lemon
1 tablespoon ketchup
Splash of Oyster Sauce
Splash of Worcestershire Sauce
Splash of Maple Syrup**
Mayonnaise, optional
Two slices of soft white bread.***
Place the chicken patties in the air fryer at 400F for 15 minutes. Remove and set aside and allow to slightly cool.
Slice your iceberg lettuce into thin shreds. Wash it. Dress it by squeezing the wbole wedge of fresh lemon juice onto the shredded lettuce. Set aside.
Combine ketchup, oyster sauce, worcestershire sauce and maple syrup to make a bootleg Katsu sauce. Set aside.
ASSEMBLY
Slice the cutlets in half. This makes it much easier for later.
Sauce it down, you do too much. Slather one slice of the bread with the bootleg Katsu sauce. Slather the other piece of bread with mayo, if you’re using it.
Add your sliced cutlets in a flat layer. Add the dressed shredded lettuce on top of the cutlets. Add the other piece of bread to close the sandwich.
Using the sliced cutlets as a guide on where to cut the entire sandwich, slice sandwich in half.
Eat it, bish.
NOTES
* I don’t like cabbage. You can use cabbage though. Remember what we talked about in the Pad Krapow newsletter? Even though “a handful” isn’t an accurate measurement for everyone because we all have different size hands, it’s also not a huge deal if you have five more strands of iceberg lettuce than me because your hands are ginormous.
** You can also use granulated sugar, or brown sugar, or your preferred sweetener to taste. It’ll have to be “to taste,” because all of these sweeteners…sweeten differently.
*** Not everyone has access to Japanese milk bread. I could have gone to Japantown and acquired it, but I’m too lazy. I already had Wonderbread in the house and that’s what I used. Worked great.
