it's that old vicious cycle shit - gotta be a big celebrity to get comped for everything and make the big bucks, but how do you become a big celebrity without those very things? it's like needing experience to get an entry level job. annoying. nonsensical. and the way of life.
and you're spot on when you mentioned all the TIME that goes into going down these mostly dead-end roads - that's unpaid work too.
and the lodging issue...there are people who are happy to crash on couches or do hostels and whatever, and then there's the rest of us. esp if you're doing a tour where you have to be "on" all day, some of us simply NEED a place to return to that's just ours, no matter how gracious a host may be. and that's legit.
speaking of food popups, there's a guy near me that does birria and vampiros and a few other things, and his wife does chamoy/tajin dipped candy. they always do it by pre-order, which might be something to consider if you're trying to stay close to home and work alone. this way he has money to get everything he needs, and prepping in advance can take some pressure off (though still tons of work of course), and you don't need to wonder if anybody's gonna show up or if you've made too much or too little. (apologies if this is something you already considered, don't wanna be condescending.)
