When I mention salt-free adobo, I mean mine. Not only are we the only salt-free/MSG free adobo and sazon on the market that uses superior quality single origin spices directly from the farmer, but we’re also the only sazon that uses wild achiote directly from Puerto Rico!
Ethan Frisch and Ori Zohar (founders of B&B) make connections with small operations across the globe to source the spices they use in their product! And I did the same. Because I wanted to use Puerto Rican achiote, B&B entrusted to me the search of finding a Puerto Rican farmer that could supply us with a moderate amount of fresh achiote.
They harvest the achiote from trees in San Sebastian, Puerto Rico while the seeds are still in their pods. Then the pods are de-seeded (the little red nibblets of achiote are actually the seeds inside the pod), and then ground at the Burlap & Barrel facility in New York, NY.

I had plenty of time to think about cheese during my nearly 3 hour drive from Chicago to Wisconsin. Being in an area known for beer, cheese and bratwurst as its regional gastronomic specialities…cheese was clearly heavy on the brain. And not just the amount of times I told someone I was from California and they recited, “Happy cows come from California,” - a campaign developed by the Deutsch LA advertising agency - but, the amount of times someone asked me if there were cheesy recipes in Puerto Rico and I had to stop and think.
“Shit, we do eat cheese. But, what the fuck do we put cheese on?”
