VIRTUAL COOKING CLASS: MOFONGO
I’m hosting my second virtual cooking class. There’s bound to be some hiccups. We’ll be talking mofongo and pilons, something that is crucial to the making of mofongo. Kinda. I’ve also seen restaurants use plastic beverage containers to mash their plantains with a bat. But, I can’t give you advice on how to wack your plantains if you don’t have a pilon. Good news, you can buy an affordable one on Amazon.

It’s the season for California King Salmon. It’s also Halibut season, sorry Halibut. The King Salmon season opened up on May 1st, closed and then re-opened a few weeks later.
2022 Commercial Salmon Season in the Monterey Bay region:
May 1-5, 10-15, 20-24
June 1-12
July 8-12, 21-25
August 3-12
And I know it’s cliche to have salmon as my favorite fish. I don’t eat the “Atlantic” (code word for farmed) salmon that can commonly be found in supermarkets. Much like produce in California, I wait until it’s in season. I wait for King Salmon season and when it’s here…I’m excited. So excited to eat that buttery, flaky, fishy and thick cut of salmon. Favorite way to eat it? On the grill! There are people who don’t like salmon for the same reasons they don’t like lamb, they say it’s too “strong” in flavor. And those are my favorite things about salmon and lamb! Ooh, salmon and lamb. Yum.
Here are some places you can find California King Salmon in Northern California…
Not only is this my favorite vendor to buy seafood. They have excellent, superior and pristine product. Based out of Santa Cruz Harbor.
Although their selection might seem a little minimal, it’s one of the few places in Sacramento where you can find good quality and fresh fish. This is probably the only place where Mami buys her fish.

I found out about Sea Stephanie Fish when they did the famous pandemic “pivot.” When the pandemic struck they set out to ensure the public could access their amazing seafood, showing up at every dock and market from San Francisco to Santa Barbara. Great place to find uni.
During the warmer months, I don’t want to stand over the stove. And don’t even think about turning on that oven. It took me a long time to get on board with the air fryer disciples. Once I did, I’ve been using it almost every day since. I still refuse to understand the need for a fucking Instant Pot (which I thought was “instapot” until a few seconds ago). This was the first time I ever cooked salmon in the air fryer, which you can see from the albumin (white stuff) that has extruded from the filet.
RIDICULOUSLY EASY AIR FRYER SALMON FOR ONE
Serves One
1 salmon filet
1/4 tsp of olive oil.
1/2 tsp Montreal Steak Seasoning
1 lemon
1 - 12 ounce bag of frozen broccoli; can use fresh if you prefer
Herb blend of your choice; like Mrs. Dash
Rub your salmon filet with the olive oil.
Season both sides with Montreal Steak Seasoning.
Place your salmon skin up, flesh side down, into the air fryer basket.
Cook salmon at 400F for 5-6 minutes.
Season broccoli with your favorite herb blend and add to the air fryer basket with salmon.
Cook broccoli with salmon for 2-3 minutes. This is for a filet more on the well done side. Maybe only cook the salmon for 5 minutes total for a medium rare.
Remove salmon and broccoli, coat the broccoli in unsalted butter.
Squeeze lemon over salmon and broccoli.
Serve.

I love my air fryer! I use it to reheat food too. I do have an instant pot and I actually use that on a weekly basis. I love to cook my dry beans in it, or stewed meats. It cuts the time down for me and on the dishes! I'm a huge soup fan though, so I love all the broth that I can easily make in it.
