Ooo this is a great idea! I have made this with potatoes and ham but I'd love to try it out with that chorizo! I also pretty much use the adobo in everything. I'm used to cooking for 5+ people so it is difficult for me to cook for less people now. I don't like wasting food though, and at least my family will eat leftovers.
My parents and siblings, and my siblings had kids. So I used to do a lot of the cooking growing up. Now I just take care of my parents so down to cooking for 3 people.
